    Actually studies have show that cooking for short periods of time causes less loss of nutrients than longer periods on the stove.

  2. Then steam it instead.
    Little bit of water in the bottom of the pan, boil up, add vegetables, put on a lock to the pan and cook as normal.
    I found that the vegetables don't turn as mushy this way aswell.
